Gastronomic day of the "carxofa", Cambrils
In Cambrils, March is the month of the artichoke, which is why every year the gastronomic days of the artichoke return, a vegetable that offers us a lot of versatility when it comes to creating different dishes, in which the flavour is guaranteed. The artichoke will shine in the special menus offered by the restaurants of Cambrils as part of the artichoke gastronomic days, more popularly known as “Encarxofa’t”.
The artichoke is a seasonal product with deep roots in this area. The variety used in the area is the white Tudela artichoke, which is oval in shape, compact in appearance and bright green in colour. Cultivated at sea level and with the agro-climatic conditions of the area, it produces a tender artichoke, with a lot of flavour and of extraordinary quality.
Artichokes with seafood cream, stewed with monkfish and clam meatballs, stuffed with quail’s egg and salmon caviar, crispy with foie shavings, with black rice, confit with sea bass supreme, inside a sausage, and many more dishes.
